Originating from my latest recipe,
chewy & Crunchy Granola Bar recipe, these granola bites are gluten free and vegan. They were a huge hit at my lunch a learn I hosted - attendees said you could taste the quality in them, they were delicious, and that they were so satisfying. I wouldn't lie to you guys! esp when it comes to snacks.
This is perfect for your on the go work snack! If you need a pick me up between breakfast and lunch - this is it! It can be so easy - with option fillings, choose your fav ingredients and make your own version!
Chewy & Crunchy Granola Bites:
Prep time: 10 minutes
Cook time: 15 minutes
Makes ~15-20 bites
Base: (needed to stick everything together!)
1/4 cup tahini paste (sesame paste)
1/2 cup maple syrup
1 1/2 cup of gluten free rolled oats
1 cup natural almond or peanut butter (I used almond and it was a hit)
Fillings (optional - choose your fav dried fruit and nuts & seeds):
2 tbsp chia seeds
1/2 cup dried cranberries
¼ cup pitted dates
1 cup raw unsalted almonds, chopped
1 cup raw unsalted cashews, chopped
1/4 cup raw pumpkin seeds
1/4 cup raw sunflower seeds
Preheat oven to 350 degrees Fahrenheit
Add the cashews and almonds to a food processor (or chop into pieces with a knife)
Mix all ingredients together in a large bowl.
Bake in an 8x8 non stick pan for 12 minutes
Let bars cool completely before cutting them. They don't stick together if you cut them when they are hot or warm. Make sure they're completly cooled! I usually leave them overnight before cutting.
