5 brunch recipes you HAVE to try

There's nothing better than waking up and cooking the best brunch on the weekends! Am I right, or am I right? Of course, I'm right! Who doesn't love brunch? & If you don't right now, you will after you make these recipes.

Since brunch is one my of favourite meals, I want to share my favourite recipes with you! Surprisingly, I'm not a big recipe follower - I mean, don't get me wrong, I love new recipes. However, I tend to spice it up a bit and add in a few extra ingredients to add a personal touch. That's the fun thing about cooking - you add in anything you like and it becomes a masterpiece! So, spice it up! Add any ingredient you like to the recipes below to make it your own.

Kat's 5 favourite brunch recipes:

  • Curried scrambled eggs with veggies


2 eggs

1 tbsp curry powder (If you like it spicy!)

Salt, pepper

Bell peppers



Chop your desired amount of veggies. Put 1 tsp of olive oil in frying pan. Fry all veggies for about 5 minutes, stirring occasionally. I usually put 1/2 cup of veggies in total. In a small bowl, beat together 2 eggs, 1 tbsp curry powder and a pinch of salt and pepper. Add eggs to veggies in the pan and mix. Flip the eggs a few times to ensure they're cooked. BAM, a curry masterpiece.

  • Curried egg wrap

Curry again? Of course!

1 whole wheat tortilla wrap

Grated marble cheese

Grate cheese all over the wrap. Take the curried scrambled eggs you just made and toss them on to a whole wheat tortilla wrap! Roll the wrap like a burrito. There should be cheese between the foldings to make your wrap 'stick' together. The next step is the most important! It makes your wrap extra yummy! Place your wrap into a heated, ungreased, frying pan with the folded side down so it sticks together. Heat over high heat for about 2 minutes. Then, flip the wrap until both sides are golden brown. Your cheese is melted and your wrap is toasted! Yum!

  • Granola cereal with fresh fruit & avocado toast

This one's super easy! All you need:

Granola ( I love the Original Harvest Crunch granola. It's the best!)

Fresh berries ( I like to use strawberries and blueberries)

1% milk

Pour your bowl of cereal and add some fresh berries! It's such a refreshing meal to start the day.

  • Will there be avocado toast there? If so, I'm in!

Ingredients are pretty self-explanatory: avocados + toast.

I like to mash my avocado with some salt and pepper in a bowl and then spread it on buttered multigrain toast. Paired with your granola cereal, you have yourself a pretty looking and pretty great tasty brunch!

  • Fried tomatoes & Eggs

It's so hard for me to choose my favourite, but this one might take the cake. It's my mom's speciality, so whenever I make it I always remember home.

As many baby tomatoes as you like ( I usually eat about 5-10)

2 eggs


Heat your skillet and add some olive oil so that the tomatoes don't stick to the pan. Slice the tomatoes in half and toss them in the pan. Cook uncovered on medium heat. Flip them occasionally. Eventually, they will become soft. Don't fry them too long, or it may turn to mush. And who likes mush? (Unless it's avocados, obviously)

Tomatoes are done - push them to the side. Now time to fry your eggs however you like them. Just crack the egg into the pan (leaving the shell out) with a little bit of olive oil so that they don't stick. I like the yolk soft, so I cook them on medium heat and only flip them once.Place your fried tomatoes on your toast and voila, you have your self a delicious brunch - a brunch that reminds me of home.

  • French toast

There are so many recipes out there for french toast! Some say dry the bread out, some say don't. I say don't. It may also depend on what breed you're using but if you want a soft french toast, follow the recipe below!


3-4 eggs

1/4 cup milk

Multigrain bread

Salt, pepper, and cinnamon

In a large bowl, beat eggs, milk, cinnamon, salt, and pepper. Heat your skillet and add 1/2 tbsp of oil if it's a non-stick pan. Put one piece of bread in the large bowl and coat it with the eggs. Flip it a couple of times to ensure its coated! Then, put it in the frying pan. Let it cook on one side until golden brown. Flip it once, letting it cook on the other side. Ta-da! You have your self some cinnamon french toast! Add fruit and vanilla yoghurt on top - my fav!
